(Optionally, top with the berries and yogurt of your choice)

Cheesecake is never allowed on any diet.  But the secret to this cheese cake is nonfat ricotta cheese.  It is the best cheese cake when you are totally craving something sweet without having  a sugar rush from a processed food cheese cake.

When you are giving up sugar, it is better to make something like this than relapse and take a trip to the Cheese Cake Factory!

1 Cup nonfat ricotta cheese

2 beaten egg whites

½ teaspoon of vanilla

½ Tablespoon of honey

1 ½ cups berries(optional)

1 ½ cup Greek yogurt (optional if no milk allergy)

Preheat the oven to 350 degrees.

Break up the ricotta using a wooden spoon.  Add the egg whites, vanilla, and honey and whisk until smooth.

Lightly coat a 6-cup cupcake tray with oil.  Put a cupcake liner in.  You can make 4 larger cheesecakes (and fill the empty cupcakes slots with water. Or you can make all six.  Cool the cheesecakes for at least 20 minutes before you serve.

Serve on a desert plate with some fresh fruit or vanilla yogurt if you want to dress it up some more.
